A journey through time through flavours and according to the seasons

Each dish tells a story, an anecdote, a piece of the identity that has distinguished the Grand Hotel Quisisana and Capri for over 150 years. Actors, writers, royalty and celebrities from all over the world have stayed within its walls, leaving an indelible mark, which is also reflected in the cuisine of La Colombaia. Chef Stefano Mazzone has expertly created a menu that evokes the flavours and atmospheres that have made the Grand Hotel Quisisana, in its own way, a legend. From classic traditional Capri dishes "contaminated" by international cuisine and reinterpreted with a modern touch.

“The 1896 menu was written in French – the language spoken in the places that were part of the French Grand Tour and also the language spoken in the kitchen because it was the language of international cuisine. Language both as a way of speaking, but above all, a way of expressing the concept of international cuisine.

 

In fact, on the menu of the time, there was uova alla monachina written in French, as well as risotto alla Milanese. This makes the Quisisana Restaurant a great flag-bearer for itself in the world. It represents Italy in the world for its uniqueness and its identity which is not only made up of Capri. It is a place that has interacted and conversed with the whole world in the past and has done so since it was opened. This has always been in the midst of the nobility, of the great entrepreneurs of the late 19th and early 20th centuries. But then, it developed its own identity – it became enriched in its own identity, intertwining with what is the fabric of its territory. And the synthesis of all this can be found today in the Quisisana menu, which is a fine collection of the many facets that gave it a purpose. Each element, each product has its reason for being in the past or present, heir to a historical “testament” or exponent of a modern culture, that of products, territoriality and seasons.

 

The artichoke that we served to the G7 ministers was a great success and this represents the territory and the seasonality of this territory, the zucchini parmigiana in bloom, the bluefin tuna mosaic, the scampi, the fried pizza are the expression of this territory, and above all, the identity of this hotel, which has a wonderful story to tell and our task is to tell it by getting to know it. I am a great collector of ancient things from the hotel; I have a very large collection that the property has made use of this year, and this makes me proud because, in some way, I too am part of the historical collection of this hotel. Quisisana has had many properties but has always maintained its identity – this is an important thing to make especially understood by our guests. A well-known Capri journalist said Quisisana outlives everyone.
