“When I arrived at the Grand Hotel Quisisana over thirty years ago, I was working as a consultant for Gualtiero Marchesi, and together we started developing a wine list. At the time, we didn’t have a wine cellar, and we took things slowly. Over time, the environment changed, as did the wine industry in many ways, including tourism and commerce, allowing us to expand our selection to the prestigious level it has reached today,” says Aldo D’Errico, Food & Beverage Manager at the Grand Hotel Quisisana.
Here, guests can enjoy an exclusive international selection, from the most celebrated Italian terroirs of Tuscany, Piedmont, and Campania to the great French wines of Burgundy and Bordeaux, and, of course, the most renowned Champagnes, such as Krug and Salon. Every bottle is chosen to express the uniqueness of its origin and to represent the finest winemaking excellence of each region. Alongside classic Italian and French wines, La Colombaia’s cellar also offers a refined selection of international wines, ranging from prestigious New World labels from California, Chile, and Argentina to emerging selections from lesser-known but equally intriguing regions such as Portugal, Spain, Slovenia, Austria, and Germany.

“A well-stocked wine cellar not only enriches the restaurant’s offering but is also essential for satisfying the most discerning guests,” adds D’Errico. “The prices of great wines may seem high, but their value increases over time, and having certain labels on the list makes all the difference in a high-end restaurant. For example, we are probably the only ones offering a vertical tasting of Gaja from the ’95, ’96, ’98, and ’99 vintages, providing an unparalleled tasting evolution.”

Krug, on the other hand, has always been on our list, and in the past, we were the first in Italy to feature the Krug Room.”
